Pommard 1er Cru "Clos Blanc" 2019 Clos du Moulin aux Moines | Burgundy

Located in Pommard, famous since the Middle Ages as "the flower of Beaune wines", Clos Blanc enjoys a privileged location. The soil is worked by hand, without the use of chemical inputs, and practices such as winter grassing encourage biodiversity and soil vitality. Le Clos Blanc rests on deep clay-limestone soils, giving Pinot Noir a unique richness and complexity. This soil, combined with optimal exposure, enables the grapes to ripen slowly and evenly.

Philippe Mischler, sommelier at Mundovin: Under the direction of passionate winemaker Willy Roulendes, the wine estate adopts organic and biodynamic viticulture. In terms of winemaking, everything is designed to bring out this unique character. Hand harvesting, followed by rigorous sorting, ensures that only the best grapes are kept. Slow fermentation in concrete tanks, using only indigenous yeasts, ensures delicate extraction of aromas and perfect control of tannins. Ageing for 16 months in oak barrels, of which only 10% are new, respects the fruit while adding a subtle oaky dimension. Finally, the absence of filtration and fining preserves the wine's integrity and energy.

On the nose, the wine offers an explosion of ripe red fruit aromas such as cherry, raspberry and morello cherry, enhanced by floral notes of peony and dried rose. On aeration, spicy nuances of white pepper and clove intertwine with deeper touches of undergrowth, cocoa and fine leather.

On the palate, the wine reveals a precise, racy structure, underpinned by vibrant freshness and a fine, persistent tannic structure. Red and black fruit flavors dominate the attack, followed by delicate licorice and truffle notes. A subtle saline minerality emerges on the mid-palate, testifying to the singularity of the terroir. The finish is remarkably long, with mentholated and spicy accents that prolong the pleasure.
