Wine Description

Domaine Hauvette 's Jaspe cuvée is a pure Roussanne from the rocky clay-limestone slopes of the northern Alpilles. The vines were planted some twenty years ago in the heart of the garrigue, rockroses and holm oaks. Here, the vines literally immerse themselves in their environment, and Dominique Hauvette ensures that nothing interferes with the osmosis between the plant and its terroir. Biodynamically viticulture since 2003, she practices winemaking without any chemical or oenological inputs, with gentle pressings and fermentations using indigenous yeasts. To complete this natural ideal, the wine is aged in ovoid concrete vats, a porous container that allows micro-oxygenation of the wine without generating additional aromas, thus allowing the wine to express itself as freely as possible.

Philippe Mischler, sommelier at Mundovin : Domaine Hauvette 's cuvée Jaspe has made a name for itself, vintage after vintage. The reproduction of the Baux de Provence terroir in this cuvée is breathtaking, without ever yielding to either opulent fruit or excessive minerality. This balance perfectly illustrates Dominique Hauvette 's quest to let the Alpilles terroir express itself through the grape variety, whatever it may be.

On the nose, the bouquet is driven by a beautiful sensation of freshness, revealing a fascinating interweaving of aromatic strata from both terroir and Roussanne: notes of honeysuckle and hawthorn, fleshy aromas of ripe stone fruit, vegetal touches of lemon leaf, and a beautiful mineral expression of gunflint and roasted dried fruit after light aeration.

On the palate, the wine has a greedy, seductive attack, immediately refreshed by invigorating acidity that runs through the palate. The body gradually refines, revealing aromas of candied citrus, fresh pineapple and juicy vine peach. A minerality emerges in retro-olfaction, giving the whole an empyreumatic dimension of gunflint that stretches to a saline finish with fine, salivating bitters.
