Wine Description
"Métis" is an intriguing and unique cuvée from the Thillardon wine estate in Chénas, Beaujolais. This atypical wine is a rare blend of two emblematic grape varieties: Gamay, the king of Beaujolais reds, and Chardonnay, Burgundy's famous white grape. This daring combination bears witness to the creativity and willingness to experiment of the Thillardon brothers, producers committed to organic and biodynamic farming. The cuvée is classified as a Vin de France, which allows great freedom in the winemaking process.
Philippe Mischler, sommelier at Mundovin : The vines for this cuvée are located on granitic soils typical of Beaujolais, which give the grapes a lively minerality. The biodynamic viticulture practiced by the wine estate enhances the natural expression of the terroir, while respecting the ecological balance. The poor soils help to concentrate the berries, while maintaining their natural freshness.
On the nose, notes of crisp red fruits such as raspberry and redcurrant are accompanied by subtle bursts of citrus and juicy white peach. In the background, a delicate floral touch and a hint of flint titillate your senses, promising a tasting experience full of surprises.
On the palate, it's a symphony of balance and freshness. The attack is lively, carried by the refreshing acidity of the Chardonnay. The Gamay brings a gourmet roundness and silky tannins that caress the palate. The texture is fluid but never simple: each sip reveals new facets, between bursts of ripe fruit, light spices and irresistible saline minerality.
