Domaine Thillardon's Moulin-à-Vent Sous la Roche is a precise, elegant expression of the Moulin-à-Vent appellation. The vines, planted on pink granite soil, benefit from privileged exposure, contributing to the wine's finesse and depth. The "Sous la Roche" parcel is located on a steep slope that favors natural drainage and optimal ripeness. The grapes, grown according to biodynamic principles and vinified without the addition of sulfur, are a hallmark of the wine estate.
Philippe Mischler, sommelier at Mundovin : This Moulin à Vent Sous la Roche is marked by aromatic purity and great expression of terroir. Its natural winemaking gives a silky structure and well-integrated tannins, while highlighting bright fruit and mineral notes. The bedrock outcrops on these plots naturally limit the vigor of the vines, favoring optimal concentration of the grapes.
From the very first nose, a bewitching bouquet of juicy black cherries and bright raspberries greets you, underscored by almost hypnotic notes of fresh violet and dried rose. A subtle hint of white pepper and warm stone add an intriguing touch, heralding a captivating sensory journey.
On the palate, it's a veritable dance: the attack is silky, almost caressing, before a vibrant energy takes over. The tannins are exquisitely fine, like lace that structures without weighing down. The fruit explodes on the palate, candied cherries and blackcurrants, accompanied by a saline minerality that prolongs the experience.
