Wine Description

La Colline Inspirée is a champagne produced by Emmanuel Lassaigne on the Montgueux terroir. A blanc de blancs cuvée, it is 100% Chardonnay from chalky soils, aged for 24 months in casks before champagnization. The biodynamic viticulture used for this champagne has truly revealed the exceptional terroir of these parcels.

Philippe Mischler, sommelier at Mundovin : The Colline Inspirée cuvée is one of winemaker Emmanuel Lassaigne's proudest achievements. He has nothing but praise for its ability to evolve, and above all for the work carried out in the vineyard and cellar. It 's an extraordinary champagne that surpasses all our expectations during tasting.

The nose reveals notes of mirabelle plum, quince, honey and a hint of pastry. A very greedy first impression that reveals a mineral touch after a few minutes of opening.

On the attack, this blanc de blancs is relatively invigorating, precise and bright. Then, in the mid-palate, fruity and floral notes appear. The finish ends on chalky, saline notes.
