In the heart of the cool combe de Saint-Aubin, Hubert Lamy 's Saint-Aubin 1er Cru Les Frionnes concentrates the subtle interpretation of a clay-limestone terroir renowned for its thin soils and the cool character of its east-facing exposure, shaping precise, chiselled wines. The Domaine Hubert Lamy, now run by Olivier Lamy, cultivates almost two hectares of Chardonnay planted between 1935 and 1985, whose age deeply structures the identity of the wines of the climat 1er Cru Les Frionnes. The grapes are harvested exclusively by hand, with gentle pressing and long fermentation in multi-wine barrels. Patient ageing takes place for 12 to 18 months in experienced demi-muids. The result is a Saint Aubin Les Frionnes whose finesse derives directly from the rigor of winemaking in the right place.
