Wine Description

Hubert Lamy 's Saint-Aubin 1er Cru Derrière chez Edouard rouge is one of the few reds from this climat. Made from Pinot Noir vines planted in 1960 on a hillside with shallow, very stony clay-limestone soils, the wine is strongly marked by limestone. The east-south-east orientation of these old vines gives them regular ripening conditions and a precise expression of the terroir. Domaine Hubert Lamy tends this small plot of less than a hectare according to the principles oforganic farming, with measured ploughing of the soil, controlled yields and exclusively hand harvesting. The harvest is entirely destemmed before a 20-day maceration in vats, punctuated by punching down and pumping over depending on the vintage. After fermentation, the wine is aged in demi-muids for 12 to 18 months, with limited use of new wood to preserve the identity of this Saint Aubin 1er Cru.

Philippe Mischler, sommelier at Mundovin : Domaine Hubert Lamy 's Saint Aubin 1er Cru Derrière chez Edouard is a concentrated interpretation of Pinot Noir. Its structure, straightforwardness and élan suggest a fine capacity for evolution, supported by the limestone identity of the slope and the maturity of the old vines. The result is a tightly woven structure characteristic of the great red wines of Domaine Hubert Lamy.

On the nose, the wine opens with a bouquet dominated by black fruits, sublimated by delicate floral aromas evoking rose and peony. Touches of black pepper, discreet oak and an airy note of flint impregnate the whole with great finesse.

On the palate, the wine is fleshy and diffuse, its density blossoming on fine tannins of silky nobility. The concentration of flavors is astonishingly fresh, marked in retro-olfaction by the minerality of limestone. The wine's length brings out a persistent sapidity on the finish, where the delicate texture of the tannic grain is savored for a long time.
