Wine Description

The Riesling "Hay! Di" Riesling from La Ferme des 9 Chemins is a rare gems born of vines over fifty years old, planted on the schistose slopes overlooking Reichsfeld, Alsace. This exclusive cuvée, only available in 150 magnum bottles, draws its strength from a hillside composed of schistosesand and clay. The winemaker, Jeanne Gaston-Breton, is committed to certified organic farming and biodynamic viticulture, respecting the rhythm of the vines and preserving the terroir. Hand-harvested at full maturity, this vintage produced a limpid juice, fermented without added sulfur, then aged for twelve months on fine lees in stainless steel vats and old barrels to preserve the original purity of the Riesling.

Philippe Mischler, sommelier at Mundovin: The Riesling cuvée "Hay! Di" is a revelation. This cuvée combines the mineral tension expected of a great Riesling with breathtaking aromatic complexity. Its incisive character in youth transforms after two to three years of cellaring, revealing admirable elegance and balance. Its exceptional drinkability, with no added sulfur, makes it a moment of purity and pleasure.

On the nose, finesse dominates from the outset, with a surprising variety of aromas, where white flowers on a citrus background give way to notes of dried fruit, notably fresh almonds and hazelnuts. A hint of fresh grape and honeysuckle add an enchanting, gourmet dimension to the bouquet.

The palate is full-bodied, carried by bright acidity that flirts with salinity. Silky-smooth yet taut, it transports us to a field of white flowers, then to an orchard of ripe yellow fruit. A touch of radiant minerality structures the wine through and through, and sublimates the fresh finish on a subtle citrus note of balancing bitterness. A real treat.
