Château Simone alone embodies a page in Provence's history. As early as 1552, the first written records attest to the presence of vines on this slope of Mount Sainte-Victoire, cultivated at the time by the monks of the Grands Carmes d'Aix. Pioneers of local viticulture, they built vaulted cellars dug into the rock, which to this day remain the technical and symbolic heart of the wine estate.
The year 1830 marked a new chapter for the wine estate, when the Rougier family acquired the bastide and its several hectares of vines. At the end of the XIXᵉ century, while the estate was being managed by the third Rougier generation, the phylloxera crisis ravaged the entire vineyard. It was gradually rebuilt, in particular by mass planting of Clairette.
At the turn of the 1940s, Jean Rougier, representing the fourth generation, resolutely defended the identity of the wine estate. It was thanks to his efforts that the name Château Simone was recognized by the INAO in 1946, followed by the creation of the Palette appellation in 1948, bringing the wine estate to the forefront of the national wine scene.
Since then, the estate has been handed down in a direct and unbroken line. Today, Jean-François Rougier continues the family tradition. He runs the wine estate with the same vision as his illustrious forefather: respect for the hundred-year-old vines, traditional growing practices without chemical fertilizers.
Terroirs, grape varieties and winemaking: the art of balance
At 23 hectares, Château Simone is the largest of Palette's five estates, covering more than half of the appellation. Its mosaic of naturally terraced plots rests on scree of lacustrine limestone, clay and gravel. On these north-facing hillsides, surrounded by a providential forest, the hundred-year-old vines benefit not only from the refreshing breezes of the Arc river, but also from controlled sunshine. This unique microclimate brings controlled heat, slow ripening and persistent freshness to the vines, whose advanced age gives the wines a rare concentration and finesse.
The Clairette, Grenache Blanc, Grenache Noir, Bourboulenc, Mourvèdre, Cinsault, Syrah and Carignan grapes have always been grown without chemical weedkillers or fertilizers, and missing vines are rigorously replaced. The plots are enriched with organic compost, and the wine estate does not hesitate to make successive sortings during the harvest to keep only the best grapes.
The winemaking process is equally respectful of tradition. The grapes are harvested exclusively by hand, in order to guarantee the integrity of the berries. The winemaking process takes place in the historic vaulted cellars, where some of the tuns date back over two centuries: fermentation in stainless steel vats, ageing in oak tuns, precise temperature control and parcel-by-parcel work to reveal the uniqueness of each batch. Our techniques are designed to preserve the freshness, aromatic complexity and natural balance of our wines.
The soul of Provence in the bottle
Château Simone rosé, made from the same grape varieties as the red, seduces with its deep color and aromas of red fruits and spices. Its ample, structured palate combines freshness and intensity, reflecting the typicity of the terroir and the care taken with each parcel.
Château Simone red, a blend of Grenache, Mourvèdre, Cinsault and secondary grape varieties, is distinguished by its deep color and complex nose. On the palate, it reveals aromas of black fruits and spices, with an elegant tannic structure and a long finish, testifying to the richness of its terroir.
But the wine that really put Château Simone on the world map is Château Simone white. Its blend of mainly Clairette, Grenache Blanc and Ugni Blanc delivers a fleshiness marked by delicate minerality, sustained freshness and a persistence that translates the noble expression of the Palette AOC. Unquestionably one of Provence's finest wines.
Today, Château Simone is recognized as one of Provence's finest wine estates. Its range of white, red and rosé wines captivates with its complexity, elegance and impressive ageing potential. The Rougier family continues to pass on its ancestral know-how, ensuring the continuity of an exceptional winegrowing heritage and the international renown ofAOC Palette wines.
The Peyre Rose wine estate is run by the charismatic Marlène Soria. One evening in 1973, Marlène Soria and her husband fell in love with this marvellous region of pine forest and rocky outcrops. Initially, the couple were looking for a vacation home, but in the end they decided to settle here permanently, taking over a wine estate near the village of Saint Pargoire.
Born into a family of winemakers, Marlène Soria quickly got used to the working conditions, despite the difficulties of the early days. For 6 years, she planted more than 17 hectares of vines without any electric machinery.
Today, thanks to her hard work, Marlène Soria is acknowledged as one of the world's finest winemakers, and the reputation of her wines is well established. The wine estate covers a total of 25 hectares, mostly planted with Syrah, Grenache and Mourvèdre red grapes. Only 2 hectares are planted with Rolle, Roussanne, Viognier and a host of other grape varieties.
Domaine Peyre Rose produces 3 red cuvées. Clos des Cistes is made up mainly of Syrah (85%) and Grenache (15%). La Syrah Leone is 90% Syrah and 10% Mourvèdre. Cuvée Marlène N°3 is 65% Syrah and 35% Grenache.
As far as white wine production is concerned, only one cuvée stands out, and not the least: Cuvée Oro, made with a majority of Roussanne and Rolle.
The most distinctive aspect of this wine estate is the ageing process. Marlène Soria has chosen to age her wines for at least 9 to 10 years before marketing. These are ready-to-drink wines that still have great ageing potential, around 5 to 10 years more depending on the vintage.
Domaine Gonon: The absolute elegance of Saint-Joseph in rare and coveted bottles

Discover the winesThe Gonon wine estate was created in 1964 by Pierre Gonon, who took over his grandfather's abandoned vineyards. He started with two hectares of vines and now owns over 10 hectares. He is a passionate winemaker who has achieved a level of excellence that few other Rhône Valley wine estates can match. His Saint Joseph wines are quite simply the best in the appellation. His winemaking is exemplary, and he has been using organic methods since 2010.
The wines are devoid of all artifice, in the most singular expression of their terroir. His Saint-Joseph reds have extraordinary ageing potential. The whites are becoming increasingly rare, revealing a rich yet fresh profile.
The Gonon estate is a must in the Rhône Valley, and naturally the most prestigious wine estate in Saint Joseph.
The Saint Nicolas wine estate is located at the western end of the Loire, near Les Sables d'Olonne. Thierry Michon, the winemaker, set up in the Brem-sur-Mer area with the idea of making great wines from a little-known appellation. His challenge has paid off.
Thierry Michon 's vines have been planted between the forest and the ocean since the 1960s. They are planted on schist, quartz and clay soils, which are particularly suited to the grape varieties planted by Thierry Michon's father, Patrice.
All the vines on the wine estate have been worked biodynamically since 1995.
Thierry Michon is constantly seeking to enrich his viticultural knowledge and seek advice from some of the world's greatest winemakers, including Lalou Bize Leroy, Anne Claude Leflaive and many others.
The wines are produced with his two sons Antoine and Mickaël, and rank among the Loire's finest. The white cuvées Les Clous and Le Haut des Clous boast a minerality worthy of the greatest Loire chenins.
Cuvée Reflets is a juicy, gourmet red made from a blend of Pinot Noir and Cabernet Franc. Poiré is an exceptional Négrette, one of the best in France.
The cuvées La Grande Pièce and Soleil de Chine complete the range of this wine estate, which we consider to be one of the finest in the Loire region.
Tasting the wines of the Saint Nicolas wine estate is a real "slap in the face" for every cuvée we taste. This small vineyard in the Fiefs Vendéens has a bright future ahead of it.
Rémy Pédréno is the undisputed star of Gard wines
The Roc d'Anglade wine estate is owned by Rémy Pédréno in the commune of Langlade, near Nîmes in the Gard department. It was created in 1999 by the Pédréno family, who produce prodigiously complex wines. The Roc d'Anglade wine estate opted out of the AOC label in order to avoid all the constraints associated with it, in particular the restriction to certain grape varieties. It is this freedom of choice of grape varieties that has enabled the wine estate to produce wines of such quality from such unique terroirs. Roc d'Anglade comprises 10 hectares of vines, divided into plots as diverse as they are varied. The oldest vines are up to 60 years old. Most of the terroir is composed of clay, silt and marl.
Under the appellation Vins de Pays du Gard, this property, set on the finest terroirs in the village of Langlade, was awarded the famous Blason Viticole in 1696 by Louis XIV. Just before the Phylloxera crisis at the end of the 20th century, the reputation of Langlade wines was on a par with the great wines of Burgundy. The soils of Roc d'Anglade are quite similar to those of Burgundy: one third clay, one third silica and one third silt.
Singular grape varieties and carefully tended vines
The wine estate's grape varieties are quite distinctive, with Chenin accounting for over 70% of the white. Rémy Pédréno has also chosen to age his wines in old foudres. This makes a real difference from other Languedoc winemakers who are used to using barrels or concrete vats.
To sum up, Domaine Roc d'Anglade is an atypical wine estate that makes top-quality wines while managing its vines organically.

An oenologist turned spokesman for Marsannay
Domaine Sylvain Pataille is the story of an audacious gamble in the vineyards of Marsannay, at the northern tip of the Côte de Nuits. Created in 1999, the wine estate started modestly with just 1 hectare of vines, rented by a young oenologist who was passionate about his profession and as yet unknown... Or almost: before signing his own cuvées, Sylvain Pataille had already acquired solid experience as an oenology consultant in Beaune.
When he set down his vats in Marsannay, an appellation long confined to a reputation for rather rustic wines, he already had the ambition to give this still underestimated vineyard a singular voice in the chorus of Burgundy appellations. From the outset, Sylvain Pataille has established himself as a staunch defender of forgotten grape varieties, such asAligoté, and as an ambassador for Pinot Noir on the limestone slopes of the northern Côte de Nuits. In the shadow of prestigious neighbors such as Gevrey-Chambertin and Fixin, he worked tirelessly. Two decades later, this adventure has become a key reference in the region, with nearly 17 hectares cultivated organically and biodynamically, driven by a quest for authenticity and independence. And with patience and rigor, he is well on the way to giving Marsannay an unprecedented reputation.
An artisan winemaker's philosophy
Going against the tide of production-oriented viticulture, Sylvain Pataille chose early on to work his vines organically, then to go further towards biodynamic viticulture, without a label. For him, respecting natural cycles is not a posture, but a way of living in phase with his environment and revealing the truth of climates. A perfectionist, he seeks to express the uniqueness of each plot without artifice, and favors the least interventionist viticulture possible. Harvesting is done by hand to preserve the integrity of the berries, then the grapes are meticulously sorted.
In the cellar, he relies on gentle winemaking, where extraction remains measured to never force the expression of the grape varieties. Fermentations are based exclusively on the yeasts present on the berries, to faithfully reflect the identity of the terroir and the vintage. Ageing takes place mainly in Burgundian "pièces" of several wines, limiting the impact of new wood to bring structure and harmony without masking aromatic purity. Little or no sulfur is added prior to bottling, and the result is cuvées of great clarity, where the precision of the fruit is combined with a silky texture and an energy that has become the signature of the wine estate.
The thousand facets of Marsannay
The work of Domaine Sylvain Pataille takes on its full meaning on Marsannay's veritable geological mosaic. Parcels range from the alluvium-rich plains to the steep, east- and southeast-facing slopes, with soils of hard limestone, marly scree and brown clay-limestone. This geological complexity allows the wine estate to play on a wide range of expressions: from straightforward, mineral whites to fleshy, structured reds.
Sylvain Pataille grows mainly Pinot Noir, the king of Côte de Nuits grapes, but he also devotes particular attention to Chardonnay, which produces white wines that are both taut and generous. Above all, he has established himself as a fervent defender ofAligoté, a long-marginalized grape variety that the winemaker has helped to rehabilitate. His plantings on well-exposed, sometimes ancient hillsides demonstrate that this grape variety, long considered secondary, can achieve unsuspected complexity when grown on great terroirs and vinified with care.
Each Domaine Sylvain Pataille cuvée reflects this quest for balance between grape varietal typicity and soil singularity, making Marsannay a life-size laboratory for exploring the richness of Burgundy wines.
Emblematic cuvées that tell the story of a terroir
The Domaine Sylvain Pataille range illustrates the in-depth work carried out over almost twenty years. In white, Bourgogne Aligoté and Bourgogne Aligoté Clos du Roy showcase this historic grape variety in expressions of astonishing mineral tension. With Bouzeron, the benchmark appellation for Aligoté, Sylvain Pataille confirms his role as spokesman for this forgotten grape variety in a cuvée that is breathtakingly fruity and complex.
The white wines of Marsannay reveal another facet of the wine estate. Among the most notable, the Marsannay blanc seduces with its balance between freshness and fullness, while the Marsannay blanc La Charme aux Prêtres stands out as a cuvée parcel vibrant with purity.
On the Pinot Noir side, Marsannay rouge expresses the sincerity of the grape variety in its most accessible version, while retaining a fine structure. Marsannay rouge Clos du Roy, from the appellation's historic terroir, displays greater depth and a sunnier dimension. Finally, Marsannay La Montagne stands out for its power and length, a symbol of the nobility that this cru, still in search of official recognition among the premier crus of the Côte de Nuits, can attain.
The Monier Perréol wine estate covers 12 hectares of vines in the Saint Joseph appellation only. Jean Pierre Monier and Philippe Perréol decided to join forces to produce "clean" wines with the purest respect for the terroir. The vines have been cultivated biodynamically and worked with horses since 1995.
Located in the commune of Saint Désirat, the Monier Perréol wine estate creates real jewels, as yet unknown to the general public and even to some Rhône Valley wine lovers.
This wine estate produces Saint Joseph reds as well as some whites. The reds have an intense, gourmand style, with notes of ripe fruit, and always retain a beautiful freshness.
Winemaking is gentle, with no inputs, and ageing takes place in barrel, leaving the wine pure and untainted by wood.
They are in the spirit of the Gonon wine estates, powerful yet refined. The wines are very affordable for the appellation and, above all, for their intrinsic quality.

In Chinon, the unrivalled complexity of Philippe Alliet's Cabernet Francs
Get the latest updates firstThe Philippe Alliet wine estate is located on the terroirs of Chinon in the Loire Valley. Philippe Alliet, the winemaker, is in the 3rd generation and works his 17 hectares of vines with his son Pierre and his wife Claude.
In the vineyard, biodynamic viticulture prevails, with the total abolition of phytosanitary products replaced by plant and mineral decoctions. Natural treatments are applied in small doses to allow the vines to develop their own defense system.
Philippe Alliet also believes in the energies and influence of the cosmos on the balance of all plants. That's why he works his vines and his wine according to the lunar calendar and good farming sense.
In the cellar, this great winemaker maintains a certain winemaking tradition, ageing his cuvée Vieilles Vignesin barrel for several months. L'Huisserie is aged for 18 months in barrels, 10% of which are new, while the famous Coteau de Noiré is aged in half-muids, 30% of which are new, for a different length of time in each vintage.
As for the cuvée Tradition, the most accessible wine is vinified and aged in vats to bring out all the fruit of theCabernet Franc grape.
This grape variety, which doesn't like approximation or high yields, is carefully selected on each of theAlliet wine estate's clay-limestone plots .

Domaine Huet in Vouvray: the art of Chenin in the pantheon of great Loire wines
Get the latest updates firstThe Huet wine estate was founded in 1928 by Victor Huet and his son Gaston. They both decided to settle in the still little-known terroirs of Vouvray. Passionate about viticulture and good wine, they devoted all their time and energy to building what is today the jewel in the crown of Vouvray vineyards.
The Huet family has vineyards on 3 very different terroirs in Vouvray. Haut-Lieu is mostly clay, Mont is flint, and Clos du Bourg is tuffeau. On these 3 types of soil, the king grape variety is Chenin, and the watchword is respect for nature. The quality of work at Domaine Huet has made it one of France's legendary wine estates. For the lucky few, you can still find wines from the 50's in a state of preservation unique for white wines. The diversity of the terroir, the care given to the vines and to winemaking, all combine to produce wines with exceptional ageing potential.
What each wine has in common is its minerality, precision and straightforwardness. The quality of the terroir and the talent of the winemakers make it possible to achieve harmony after a few years of ageing.
Indeed, when young, the wines are very closed and do not reveal their full potential, whether dry or sweet. You need to be patient and wait at least 4 to 5 years to begin to discover the complexity of the terroir, but it's best to keep them between 5 and 15 years to enjoy them at their peak drinking.
Today, Gaston Huet is still at the wine estate, accompanied by his son-in-law Noël Pinguet and his loyal employee Jean Bernard Berthomé. They work hand in hand to perpetuate the biodynamic practices begun in the 1980s.
The Domaine Huet is an emblematic name in the Vouvray region, and a must if you want to taste a true Vouvray de garde.

Antoine Lienhardt on the Côte de Nuits, first wines of the new vintage!
Get the latest updates firstThe Antoine Lienhardt wine estate is located in the very south of the Côte de Nuits, between Nuits Saint Georges and Beaune. In 2010, Antoine took over the vineyards from his grandfather Maurice Guyot. He began vinifying his own wine the following year. The estate's reputation began to take shape when he enlisted the help of his partner Juliette Joblot, producer of fine wines in the Givry appellation.
She has been with him from the start, passing on her experience in winemaking and ageing. Antoine Lienhardt's thirst for knowledge didn't stop there, however, and he went on to learn at two renowned wine estates in Chambolle Musigny and Chablis.
Following these various training courses, his work became more focused on controlling yields in order to bring as much elegance as possible to his wines. The range of wines is vast, from generic Burgundy to the finest Côte de Nuits Villages, notably "Les Essards", "Les Plantes aux Bois" and "Aux Vignottes".
Our wine estates are part of a culture that respects both know-how and the environment. Limiting yields produces juices of superb richness. The attention paid to each cuvée is worthy of the know-how of the great names of Vosne-Romanée's finest climats. Extractions are very gentle, lasting around 12 days. Barrel ageing lasts around 12 months and is never carried out with new wood, so as not to mark the wine.
The result is juice of superb intensity and aromatic complexity. The definition of fruit and spice is formidable. On the palate, the wines are very juicy and richly fruited in a case of finesse. Great attention is also paid to the texture of the tannins, which can easily be described as very elegant.
