Wine Description

Bouzeron is one of the last parcels Sylvain Pataille has recovered. This appellation is becoming one of the most sought-after on the Côte Chalonnaise. The aligoté grape, king of Bouzeron, is pampered by Sylvain Pataille. The vines are planted on a soil composed mainly of white marl and limestone. The wine is winemaked without sulfur and aged in old barrels for 18 months.

Philippe Mischler, sommelier at Mundovin: The Bouzeron from Sylvain Pataille's wine estate is certainly the best to be found in the appellation. In a more complex style than the Bouzeron from Domaine de Villaine. It is clearly the quintessential expression of the Bouzeron terroir.

On the nose, the wine opens with floral notes of eucalyptus and coriander. There are also hints of pink grapefruit, Granny apple and a touch of greengage.

The palate is a true model of balance. It subtly interweaves the crisp fruitiness of Aligoté with a spicier dimension and a saline character. The finish is accompanied by refreshing touches of eucalyptus.
