Wine Description

Sylvain Pataille 's Bourgogne Aligoté Champ Forey is a cuvée that is as remarkable as it is exclusive. From a small parcel of 0.30 hectare in Marsannay, the old vines planted between 1932 and 1961 offer a rare and precise expression ofgolden Aligoté. On this high-altitude terroir perched at around 250 meters, the eastern exposure and limestone gravel soils give the grape variety a mineral character and fabulous tension. The Sylvain Pataille wine estate works its plots at , limiting yields and using biodynamic methods to preserve the balance of the soil and respect the vine's cycle. Fermentation is natural, and the wine is aged on fine lees in old barrels for 12 months, to bring just the right amount of complexity and patina to the wine.

Philippe Mischler, sommelier at Mundovin : Sylvain Pataille 's Bourgogne Aligoté Champ Forey is a masterful blend of freshness, precision and mineral energy. This is probably the most enchanting Aligoté from the Sylvain Pataille wine estate, with an ageing potential of 5 to 8 years.

On the nose, the wine seduces with its clarity of citrus zest, delicate white flowers and chalky mineral notes. With a little aeration, the mineral profile gains in intensity and elegance.

On the palate, the ample body is structured by energizing tension. The aromas of white flowers and fresh citrus fruit typical ofgolden Aligoté blend harmoniously with the complexity of mineral notes, whose delicately chalky texture creates a gastronomic profile. The finish is long, salivating, punctuated by a saline freshness that invites another sip.
