From a tiny parcel in Couchey, just outside Marsannay, this rare wine pays tribute to a forgotten grape variety: Pinot Beurot, the Burgundian name for Pinot Gris. Planted in 1929, these old vines are rooted in deep clay-limestone soil, from which they draw fleshy substance and elegant tension. True to its philosophy, the Sylvain Pataille wine estate cultivates these vines according to biodynamic principles, harvesting by hand and allowing fermentation to proceed naturally with the indigenous yeasts present on the berries. A long ageing period of 12 to 18 months in old barrels perfects the aromatic expression of this old-fashioned grape variety, producing a white wine that is pure, textured and profoundly Burgundian.
