Wine Description

Gevrey-Chambertin Ostrea from Domaine Trapet Père et Fils has its origins in the oldest finages of the wine estate. On this southern slope of the Côte de Nuits, Burgundy 's limestone soils are rich in marine fossils. Its name refers to Ostrea acuminata, a small fossilized oyster that permeates the iron-oxide-rich marl of the four historic parcels of Gevrey Chambertin that make up the Ostrea cuvée. These Pinot Noir vines, some of which were planted in 1913, bear witness to a winegrowing heritage of rare continuity. Stony soils, alternating limestone and red marl, and the presence of fossils structure a deep, draining terroir, giving Gevrey Chambertin its reputation for natural density. Biodynamic viticulture at Domaine Trapet Père et Fils maintains the vitality of old vines and soils through meticulous work that respects vegetative cycles. The grapes are harvested by hand, and fermentation is carried out with 70% whole bunches of grapes, using the indigenous yeasts present on the berries. Ageing takes place over 15 to 18 months, exclusively in oak barrels, 30 to 50% of which are new.

Philippe Mischler, sommelier at Mundovin : Gevrey Chambertin Ostrea from Domaine Trapet Père et Fils embodies the quintessence of its appellation, with density and persistence well beyond its status as a cru communal. The wine bears the imprint of its terroir in its characteristic sapid depth, sublimated by the wine estate's signature precision. Its relief and purity suggest a harmonious evolution over a decade or so. Real 1er Cru potential!

On the nose, ripe red and black berries burst forth. Between blackcurrant, blueberry and cherry pit, hints of licorice and sweet spices structure a deep, lively profile. Fragrances of violet and blood orange float above the glass, while a mineral framework of wet stone in retro-olfaction recalls the essence of the Gevrey Chambertin terroir of this Ostrea cuvée.

On the palate, the sensual material is endowed with a generous sapidity that stretches the ripeness of the black fruit and the concentration of the tertiary notes. Juicy, finely crafted tannins provide a supple texture with a delicate grain. The saline, vibrant character of the acidity contributes to the harmony between density and minerality, and unfolds a remarkably persistent finish.
