Wine Description

Harvest concentration predicts fermentation length. Here, nature guides the winemakers! Operations are carried out exclusively with indigenous yeasts.

Healthy, over-ripe grapes are picked and passed through the rows"by successive selections". Traditional whole-cluster winemaking, with gentle, careful pressing. After a night of settling, half the must is put into vats and the other half into barrels. The wine then rests for 6 months before being bottled in spring.

Chenin (like Riesling) is a grape variety with a marvellous capacity to reveal the vintage and the expression of the terroir in which it takes root. The grape's intrinsic dynamic freshness carries the richness of over-ripeness, while providing excellent ageing potential.

The subsoil of the Clos du Bourg parcel is rich in mineral salts, and the wines produced from this terroir express an intense expression of minerality.

Its ageing potential and slow, complex evolution are due to its natural acidity.

In its youth, this wine expresses delicate fruit (quince, delicate pears); as it evolves, it acquires finesse and subtlety, developing aromas of candied yellow fruit. Freshness carries the balance of this wine, so despite the concentration and richness of residual sugars, the wine is airy, the finish long and the wine is rich in flavor.
