Wine Description

Blanc du Mas des Chimères is the sunny, mineral expression of white Languedoc. Just a stone's throw from the Lac du Salagou, the vines are rooted in red and black soil, combining ancient ruffes and volcanic flows. This raw landscape shapes a wine that stands apart, torn between the heat of the Mediterranean and the coolness of the heights. With each vintage, the wine estate cultivates the singularity of a complex climate, and transforms this reading into a profoundly distinctive white cuvée. The blend is a signature of the wine estate: Viognier, Chardonnay, Grenache Blanc, Carignan Blanc, Roussanne and Terret, organically grown and hand-harvested early in the morning to capture the freshness. Gentle winemaking and measured ageing in old barrels allow the wine to blossom without aggressive intervention.

Philippe Mischler, sommelier at Mundovin : This Blanc du Mas des Chimères is a magnificent balance of richness and precision. It speaks the language of terroir, with an intense, complex aromatic palette, without ever falling into exuberance. This Coteaux du Salagou wine is full-bodied, but also taut, fully reflecting the Languedoc identity.

On the nose, the wine opens with delicate notes of wild and herbal flowers, led by hawthorn, lime blossom and honeysuckle. Fragrances of white peach and acacia honey appear on aeration. A certain mineral freshness brings lightness to the whole.

The palate is full-bodied, gracefully marked by the roundness and fatness typical of Roussanne and Chardonnay. The aromatic voluptuousness of Viognier expresses itself frankly in aromas of apricot, juicy nectarine and jasmine blossom. Grenache Blanc and Terret, Languedoc's emblematic white grape varieties, provide a framework of controlled acidity and invigorating minerality. In the background, a saline sensation recalls the signature red and black Salagou soils.
