Wine Description

Mas Jullien 'sLes Derniers États d'Âme is the freest white cuvée from this emblematic Languedoc wine estate. ThisIGP Hérault wine gives voice to three grape varieties that are rare in the region: Bourboulenc in the majority, Carignan Blanc and a touch of Chenin - all from parcels scattered across the limestone and schist of the Terrasses du Larzac wines. Olivier Jullien imagined this label as an experimental workshop, where each vintage recounts its moods, its plot variations, its "states of mind". The winemaker works according to the principles oforganic agriculture, without official certification, relying on light ploughing, treatments based on plant decoctions and close observation of each plot. The grapes are harvested by hand at just the right moment of ripeness, with slow, respectful pressing. Fermentation is carried out exclusively with indigenous yeasts. For this vintage, the Bourboulenc was aged in sandstone jars, while the Carignan Blanc and Chenin were vinified in demi-muids, without stirring or filtration, to ensure aromatic transparency and purity of expression.

Philippe Mischler, sommelier at Mundovin : Les Derniers États d'Âme is one of Mas Jullien's most singular whites. It's not framed in any way, retaining a southern density while going straight. Its minerality is reminiscent of Olivier Jullien's early cuvées from the 1990s, but with greater precision and, above all, a saline dimension that gives this Languedoc white a superb élan.

On the nose, the aromas are floral and vegetal, with acacia flower, fennel, hints of fresh aniseed and pine nuts. This is followed by an impression of damp garrigue, where lemon thyme and savory rub shoulders with a fine peppery note that adds depth without masking the mineral structure.

On the palate, the attack is full-bodied, both savory and straightforward, carried by a natural roundness without excess. The body is generous, supported by a dry, taut mid-palate that brings a real sense of balance. Flavors of citrus zest, fennel and a seductive touch of star anise are followed by a clear saline minerality. The finish is long, fresh and salivating, leaving a vibrant, harmonious impression.
