Among the classified terroirs of the Grande Vallée de la Marne, Bérêche & Fils ' Champagne Aÿ Grand Cru cuvée is a veritable work of purity and depth. Born on the legendary hillsides ofAÿ, it comes from the Froide Terre and Brise Pot parcels, two historic parcels with southern and south-western exposure. The vines, over fifty years old, draw their sap from chalky, fine-textured soils, where generous sunshine meets cool subsoil. The blend is made up of 75% Pinot Noir and 25% Chardonnay, which the wine estate nurtures using methods that respect the balance of the soil and living organisms. After 72 months of cellaring, the wine gains both density and grace. True to its philosophy of precise craftsmanship, Maison Bérêche has produced a racy Ay Grand Cru that's built to keep.
Philippe Mischler, sommelier at Mundovin: Bérêche & Fils ' Champagne Aÿ Grand Cru embodies the nobility of a terroir and the precision of a great house. It is a wine that is both vibrant and vinous, with a rare precision. Its balance between flesh and tension makes it one of the finest representatives of the Bérêche style. Produced in small quantities, this exclusive cuvée is aimed at lovers of pure emotion, in search of the quintessence of a mythical terroir.
The nose opens with notes of wild strawberry and crushed raspberry, before revealing delicate perfumes of white flowers and bursts of fresh citrus. The bouquet becomes more complex, with evolved scents of fine brioche, mineral notes of chalk and a discreet touch of smoke. Everything here exudes precision and restraint, suggesting a fine potential for evolution over the coming years.
On the palate, we discover an extremely luminous champagne, which gradually reveals a silky body served by a particularly fine bubble. The texture of this Ay Grand Cru impresses with its purity and superb chalky tension. Delightfully vinous notes of ripe red fruit and nuts unfold on the palate, while the vibrant salinity of the terroir prolongs the sensation of harmony and balance.
