The Chablis Grand Cru Valmur of the Jean Collet et fils wine estate is centrally located on the Grands Crus hillside. Its shape evokes that of a valley, hence the name "Valmur". The entire plot is farmed organically and enjoys a north-west exposure. With its extreme mesoclimate, Valmur is very cold in winter and hotter than the regional average in summer.
Philippe Mischler, sommelier at Mundovin : Valmur is a very powerful, massive climate with a lot of minerality. This gives the wine an austerity and restraint that are the hallmarks of great Chablis wines. It's a great wine for laying down. It generally takes more than 10 years for the wine to express the full potential of its terroir. Perfect with white meat in sauce, lobster or mature cheeses.
On the nose, the wine offers beautiful notes of jasmine. We also note white fruits such as Reine Claude, William's pear and reinette apple. There's also a lovely spicy note of white tea and cardamom.
The palate is full-bodied, with acidity revealing itself gradually and elegantly. The complexity of the nose is repeated on the palate, with a mineral and saline touch at the end that prolongs the pleasure of tasting.
