In the refined range of non-alcoholic creations from the Danish company, LYSERØD from Copenhagen Sparkling Tea Company stands out as an exceptional rosé effervescent. With its velvety, flavorful texture, this sparkling tea is designed as an elegant alternative to sparkling rosé Champagnes. Imagined in 2017 by award-winning sommelier Jacob Kocemba and Bo Sten Hansen, this beverage is the fruit of the encounter between gastronomic expertise in food and beverage pairing, and the great Asian traditions of tea. LYSERØD is based on a complex blend of organic teas, including Oolong tea, Silver Needle white tea and hibiscus flowers. Brewed separately and then blended with organic grape juice, they offer a sophisticated framework of contemporary lightness, which the addition of CO₂ at the end of the process adorns with a fine, flavorful effervescence.
Philippe Mischler, sommelier at Mundovin: LYSERØD from the Copenhagen Sparkling Tea Company embodies a new form of gourmet beverage, characterized by its delicacy and aromatic roundness devoid of superfluous sweetness. This effervescent tea has quickly established itself on Michelin-starred tables as a worthy alternative to a great rosé Champagne.
The nose opens with an intense bouquet of red berries, including the crunch of ripe redcurrants and cherries. Subtle notes of red apple and hibiscus add a welcome acidic delicacy, tempering the velvety taste of Silver Needle white tea.
On the palate, the attack is elegant and gently acidic, marked by an enveloping texture whose depth recalls the delicate bitterness of Oolong tea. Subtle tannins breathe character into the whole, perfectly balancing the red fruit notes. The finish lingers harmoniously on discreet minerality and a slight, very noble bitterness. The overall impression is airy, refined and extremely seductive, true to the spirit of a rosé sparkling wine.
