Domaine André et Mireille Tissot 'sArbois Savagnin Sous Voile is a real plunge into the soul of the Jura, at the heart of a centuries-old tradition. On hillsides where clay-limestone soils tell the story of Jura geology, biodynamically grown Savagnin flourishes under the rigorous care of Bénédicte and Stéphane Tissot. Hand-harvested when fully ripe, it begins its life in barrel, where a veil of yeast slowly settles in, without the addition of oxygen or superfluous interventions. For almost three years, the wine will develop a patina and enrich itself, gradually trading its youth for an intense golden color and a subtle balance between oxidation and freshness.

Philippe Mischler, sommelier at Mundovin : This Savagnin sous voile from Domaine Tissot opens up a patient dialogue between fruit, minerality and the patina of time. It has a rare authenticity, a precision that invites meditation. Its saline sweetness is a signature, a promise to be savored sip after sip. This wine is moving in its ability to summon the memory of the Jura while remaining singular: it is deeply rooted in its land, but with its own identity. It possesses a quiet strength that invites you to take the time to unravel the formidable aromatic beauty of Savagnin as it blossoms in the secrecy of a veil of yeast. It's a demanding, generous wine, in the image of Bénédicte and Stéphane Tissot.

From the very first whiff, we perceive a powerful, racy profile of formidable complexity. Aromas blend seamlessly, with breathtaking harmony and depth. Candied citrus blends with stewed quince and dried apricot, while honey coats the nuts. A touch of bergamot and kumquat essential oil precedes the camphorated hint of clove, saffron and cardamom. An astonishingly fresh and pure iodine note seems to echo the cliffs of the Jura, and combines gracefully with truffle and undergrowth accents that add an irresistible umami note.

On the palate, the attack is gently caressing, carried by controlled, straightforward acidity. The wine unfolds without blushing the incredible palette perceived on the nose, between fresh walnuts and green apples, dates and dried apricots, fresh and candied citrus fruits, creamy honey and bitter almonds... The list grows longer with every sip, like a constantly renewed discovery in which the racy character of mushrooms follows the delicacy of dried country flowers. Elegant salinity and a fresh note of eucalyptus add tension to the whole. The finish continues endlessly with flavors of undergrowth, truffles and sweet spices, signing off a long, refined persistence.
