With this cuvée Vieilles Vignes from the wine estate, we immerse ourselves in the heart of the Calce terroir. Grapes from very old Grenache and Macabeu vines give this wine its unique character. Aged between 60 and 110 years, these old vines bring great complexity to this wine. The soil is composed of grey schist, favoring freshness and slightly vegetal aromas.
The age of the vines and the desire to achieve perfect ripeness reduce yields to just 15 hectoliters per hectare in warm years.
Lionel and Gérard Gauby are determined to continue working to make some of the finest wines in Roussillon. Their winemaking methods are very low-interventionist, with long ageing periods. Over 15 months in very old foudres. Finishing is done in demi muids for around 8 months to give the wine a patina.
Philippe Mischler, sommelier at mundovin: For me, the cuvée Vieilles Vignes from Domaine Gauby is the most representative of the style of the wine estate and the Calce terroir. The quality and natural power of this wine give it tremendous complexity.
The nose reveals a very aromatic, powerful bouquet with notes of undergrowth, gunflint, aniseed and a hint of resin. Very pleasant and concentrated. Good aeration is necessary to obtain this complexity, especially in youth.
The palate is dense and concentrated, revealing notes of candied lemon, vineyard peach and elderflower. Full-bodied throughout. It finishes with lovely, fine bitters that add sapidity to an already full-bodied palate.
