Domaine Gauby 's Côtes Catalanes Vieilles Vignes rouge embodies the sincere expression of Roussillon : a dense red wine, where the history of old vines meets the characteristic freshness of the Mediterranean coast. Made from vines averaging 60 years of age, some of which are over a hundred years old, planted on sedimentary schist and limestone soils, this wine combines the emblematic grape varieties of Roussillon. Carignan, Syrah, Grenache and Mourvèdre are cultivated according to biodynamic principles, with a very measured yield of 20 hectolitres per hectare, a guarantee of quality and concentration. The grapes are harvested by hand, meticulously sorted to retain only the healthiest bunches. Winemaking is based on long maceration in whole bunches, with no added inputs, in stainless steel and concrete vats, with spontaneous fermentation using indigenous yeasts. Ageing lasts between 10 and 24 months, in old foudres and a small part in new barrels, before the wine rests for 9 to 13 months in bottle, without fining or filtration, to preserve its purity and depth.

Philippe Mischler, sommelier at Mundovin : This Vieilles Vignes red seduces with its balance between expressive concentration and elegance. The Carignan, from century-old vines, contributes a smooth, round texture, perfectly framed by the fine tannic structure of the Syrah, the character of the Grenache and the body of the Mourvèdre. This is a powerful, precise wine, where the substance is sustained without being overpowering. Its ageing potential makes it a first-rate reference in the Roussillon region.

On the nose, the wine opens with a rich bouquet of jammy black fruits: wild blackberry, black cherry and plum. Hints of licorice and garrigue plants such as thyme and laurel add further aromatic depth. A hint of violet and a mineral touch of graphite add a racy dimension.

On the palate, the attack is dense, with tight, silky tannins that unfold with ease in an enveloping body. Juicy black fruit unfolds, underlined by controlled acidity. Spicy nuances and a touch of pepper meet the tannic framework with great breadth. The finish is long, expressive and persistent, a perfect illustration of the balance achieved by Domaine Gauby on this cuvée, between power and elegance.
