Gauby's Coume Gineste was born where limestone meets schist, in Calce, a village perched high in the Roussillon garrigue, far from trends and main roads. Gérard Gauby is one of those who introduced the world to this wild and arid terroir, and this cuvée is its most accomplished expression. The white and gray Grenache grapes take deep root here , cultivated biodynamically, hand-harvested, and rigorously sorted.

Philippe Mischler, sommelier at Mundovin: Gauby’s Coume Gineste is a white wine from the South unlike any other. There is a tension, a saline minerality, and a verticality in this wine that one does not expect to find under the Catalan sun. Gérard Gauby and his son have created something unexpected here—a finely crafted, precise, and lively wine. It is the very opposite of the southern cliché.

The nose opens with notes of lime, anise, white peach, a hint of honey, and warm stone. A bouquet that is both sunny and crisp, bearing the imprint of Calce’s iron-rich schist—smoky yet always fresh.

The palate, both lively and full-bodied, is marked by a persistent saline minerality complemented by hints of citron and flint. The finish lingers for a long time and reveals a depth that few white wines from the south can claim.
