Jean-Philippe Padié 's Petit Taureau is one of the most endearing expressions of this talented artisan winemaker in the Roussillon. Planted on the arid heights of Calce, the vines are deeply rooted, offering low yields but high grape concentration. In this blend of several small plots, Carignan on black schist and Syrah on limestone marl form a powerful antagonistic duo, reflecting the geological diversity of the Fenouillèdes region. There's nothing spectacular here: just a demanding terroir that can be tamed slowly, with a great deal of attention.
Jean-Philippe Padié, who trained at Gauby and Mas Amiel, cultivates his vines organically according to the most demanding biodynamic principles, with artisanal intent in every gesture. His know-how is brilliantly expressed in this cuvée, which combines the depth of Carignan with the floral tension of Syrah. Gentle winemaking, with no superfluous inputs, and ageing in concrete vats produce a lively, free-flowing, well-balanced red that faithfully reflects the personality of the grape varieties and terroir.
Philippe Mischler, sommelier at Mundovin: Petit Taureau is a wine of surprise and balance: at once wild and precise, instinctive yet disciplined. This blend of Carignan and Syrah has a bright black fruit profile, with a real depth and a natural grain with a saline edge that makes all the difference. It is unquestionably one of the finest reds of Roussillon.
The wine's nose opens with a juicy bouquet of blackberry, cherry and plum, enhanced by a subtle floral touch of violet and peony. There's a hint of blood, evoking a slight reduction, which blends beautifully with accents of black pepper, licorice and leather. A light smoky note adds delicious complexity and prolongs the palette.
On the palate, the attack is supple and immediately delicious. The mid-palate reveals a silky texture, held together by a fresh acidity that brings out the nerve of the black fruit. The fine tannins ensure a light, digestible yet present structure. The finish stretches long and deep, between minty freshness, black fruits and salivating bitterness.
