Mas des Chimères Rosé is produced from grapes grown in the Coteaux du Salagou appellation, in the heart of the Larzac terraces. This is one of the most beautiful areas of the appellation, both geologically and visually. The terroir is predominantly sandy-clay, rich in iron oxide. What makes this terroir so special is the presence of basalt blocks from the volcanoes surrounding the Salagou valley.
Philippe Mischler, sommelier at Mundovin : Mas de Chimères Rosé is a blend of Merlot, Terret Gris, Cinsault and Mourvèdre. It's a rosé de saignée, very lightly macerated to give it a beautiful, intense red color and a delicious mouthfeel. Yields are kept to a strict minimum, at 26 hectoliters per hectare, just like the rest of the wines from the wine estate.
On the nose, the wine opens with magnificent notes of sugar redcurrants, rosewater, orange blossom and a hint of spice, giving the wine its distinctive character.
On the palate, this rosé is both charming and refined. The greediness of the nose is repeated on the palate, counterbalanced by a fine acidity. This makes for great drinkability and, above all, prolongs the pleasure even at high temperatures.
