Wine Description

Thomas Pico 's Chablis Vent d'Ange Mise tardive from Domaine Pattes Loup has become a benchmark in the Chablis wine estate. It stands out for its very fruity, accessible character when young. Domaine Pattes Loup is also one of the few biodynamic wine estates in Chablis. Thomas Pico categorically refuses to use phytosanitary products and strives to work as much as possible by hand. He limits his yields so that the wines are as deep as possible.

Philippe Mischler, sommelier at Mundovin: Every year I look forward to the release of the new vintage from Domaine Pattes Loup. For several years now, Thomas Pico has been making progress in the way he works his vines and his wine. The latest vintages shine with brilliance, luminosity and elegant ageing. These are Chablis wines that reveal very intense fruit in their youth, before allowing the terroir to take over and bring out their mineral character.

On the nose, the wine expresses notes of ripe fruit, a touch of cinnamon and mint. After a slight oxygenation, an original hint of honeysuckle and chamomile appears. A very distinguished, open nose.

The palate is greedy, full-bodied, with notes of quince, bergamot and hints of green apple. The minerality is not yet very present, but you can feel that there's real substance in this wine. The finish finishes beautifully with lightly spicy notes that add great depth.
