Xavier Braujou, owner of the Domaine de la Terrasse d'Elise, is one of the finest winemakers in the Languedoc. The son of a winemaker, he embarked on his adventure in 1998, working at the same time to finance his business. Xavier Braujou is a self-taught winemaker who did not go to viticulture or oenology school. He is a tireless worker and meticulous in everything he undertakes.
Today, he masters his terroir, winemaking and ageing methods to perfection. Nor does he hesitate to cellar his wines for a few extra years to refine them so that they are ready to drink straight from the bottle. Cuvée Élise is a fine example of this.
All the vines on our wine estate are farmed organically, and yields are deliberately reduced to no more than 25 hl per hectare. Xavier Braujou of the Terrasse d'Elise wine estate has gone even further, since he wanted to give his own personal vision of wine in the Aniane area, and so had to dispense with the AOC appellations in favor of the much more flexible IGPs in terms of grape varieties and winemaking.
Each of these cuvées has a very different character, while of course retaining the winemaker's style. Cuvée XB is a pure Syrah in a fluid, fine, spicy style with a hint of rusticity. The Enclos cuvée is a pure Mourvèdre, rustic yet with a very fine texture. Cuvée Pradel is a pure Cinsault in the spirit of a great Burgundy from the south of France, combining finesse, complexity and gourmandise. Cuvée Élise is the most representative wine of the wine estate and one of Xavier Braujou's greatest successes, but it remains personal. Les Hauts de Carol's is the estate's top-of-the-range wine, requiring at least 5 years' ageing, ideally 10.
Xavier Braujou also produces a sublime white wine, fruity, floral and very precise, like the cuvée Siclène.
