The Chandon de Briailles wine estate is a magnificent Burgundian property located 4 km from Beaune. It spans 14 hectares across the municipalities of Savigny-lès-Beaune, Pernand-Vergelesses, and Aloxe-Corton.

The wine estate produces approximately 50,000 bottles per year, which grace the tables of the world’s finest gourmet restaurants.

The Choice of Biodynamics: A Reflection of Terroir

The Nicolay family is one of the few in Burgundy to have chosen to convert the entire wine estate to biodynamic farming. The vineyards are therefore plowed, and the use of synthetic products is strictly prohibited. This results in balanced, fully ripe grapes and revitalizes the vines. The goal is to produce wines of the highest quality and to faithfully express the terroir of each appellation in the Côte d’Or.

Yield regulation was also a deliberate choice by François de Nicolay, who prioritized deep root development in the vines so they would not suffer from water stress and could draw water from deeper in the soil. This meticulous work enhances the terroir’s identity while minimizing intervention in the winemaking and ageing processes.

Winemaking that combines classic and modern approaches

Winemaking is carried out in a “neoclassical” manner, meaning that the wines are aged in Burgundian-style barrels in accordance with ancestral know-how. This method, faithful to tradition, is complemented by oenological and biological insights gained over the past decade.

Since the 1990s, the wine estate has produced cuvées of great consistency, whether white or red. The wines express themselves with finesse and always reveal great freshness. Most of them improve with age, such as the Pernand Vergelesses 1er Cru Iles des Vergelesses or the Corton Blanc.
