Jonathan Didier Pabiot
Jonathan Didier Pabiot is a 15-hectare wine estate in the Pouilly Fumé appellation. The adventure began in 2005, when he took over his father's vineyards. His first vintage dates from 2006. From the outset, it was natural for Jonathan Pabiot to work organically, in order to revive the Pouilly vineyard. He produces 4 cuvées exclusively in the Pouilly Fumé appellation. We were particularly taken with two of them: the Florilège and Prédilection cuvées.
The wines produced by the Jonathan Didier Pabiot wine estate are mineral, precise and fresh. The Sauvignon grape is enhanced by the extraordinary work carried out by the wine estate, and in particular by the use of biodynamic principles, which have enabled the vines to grow deeper into the soil.
The aim has always been to produce lively, dynamic wines with as few inputs as possible. Only a small amount of sulfite is added at bottling, to ensure that the wines remain stable during aging.
For Mundovin, this is a wine estate with a great future ahead of it, one of the best producers of Pouilly Fumé, perhaps even the best.
