For over twenty years, Maison Valette, located in Chaintré between the Mâconnais and Beaujolais regions, has been cultivating its 8.5 hectares of vines using organic methods. Made exclusively from Chardonnay, this family-run wine estate began with Philippe's grandfather, a tenant farmer from Bresse, who passed on his know-how to his son, and then to Philippe Valette.
Philippe now runs Domaine Valette with a deep respect for the soil and microbial life. Since 1992, the wine estate has followed biodynamic principles, promoting a natural balance between the vine and its ecosystem. Practices such as regular scratching of the soil and grassing allow deep root development, essential for wine quality.
Rejecting organic and biodynamic certification on principle, Philippe Valette believes that it is up to conventional winegrowers to prove the transparency of their practices. His philosophy is based on passion and patience, with minimalist winemaking using indigenous yeasts and no added sulfur. The domaine's wines benefit from long ageing on lees, sometimes up to 72 months, in barrels without racking, revealing all the richness of the terroirs of Mâcon-Chaintré, Viré-Clessé and Pouilly-Fuissé.
