The Kévin Bouillet wine estate, located in Pupillin, near Arbois in the Jura, is the result of a winemaker’s passion. In 2018, he took over family-owned plots and expanded his wine estate with vineyards acquired from retiring winemakers, bringing the total area to 4 hectares. From the very beginning, Kévin Bouillet chose to practice organic viticulture, cultivating the five iconic grape varieties of the Jura— Chardonnay, Savagnin, Poulsard, Trousseau, and Pinot Noir— as well as a rarer variety, Melon à Queue Rouge. Among his most memorable experiences was working alongsideEvelyne and Pascal Clairet at Domaine de la Tournelle.

The vines, ranging in age from 40 to 70 years, thrive on terroirs typical of the Jura, composed of Lias limestone and red marl. Kévin Bouillet takes a meticulous and nature-respecting approach, documenting every treatment and ensuring rigorous soil maintenance to preserve the natural balance of the plots.

In the cellar, he favors minimal-intervention winemaking methods that faithfully reflect the terroir of Pupillin and the identity of Jura wines. Among the wine estate’s flagship cuvées is the Savagnin Ouillé, a dry white wine offering freshness and characteristic aromas of nuts and spices. The Pépin Blanc, made entirely from the Melon à Queue Rouge grape, stands out for its clean, crystalline structure. Finally, his Pinot Noir reveals striking finesse and a finish worthy of the greatest wines.
