This Chablis Côte aux Prêtres cuvée from Château de Béru takes its name from the plot where the vines are carefully cultivated, close to an ancient pilgrimage route leading to Vézelay on the way to Compostelle. The vineyard is perched atop a west-facing hillock. Its gentle slope, exposed to a constant gentle breeze, is composed of Kimmeridgian limestone scree and decomposed soils, releasing crystals and minerals. This unique terroir gives the wines an assertive personality, highlighting their salinity, ripeness and concentration.
Philippe Mischler, sommelier at Mundovin : This Côte aux Prêtres cuvée reveals impressive energy, just like its sister from the Montserre parcel. Although the vines are slightly lower in altitude, the wine still displays an impressive verticality, with more body on the palate. The tension is palpable, accompanied by an extra note of greediness. A saline minerality is present at every moment. This is a very fine wine, ready to age for over 10 years in the cellar.
On the nose, it reveals delicate aromas of ripe white fruit, preserved lemon and saline mineral notes characteristic of the Côte aux Prêtres limestone terroir. With aeration, floral nuances and a hint of honey develop, adding to its complexity.
On the palate, this wine reveals all its richness and depth. The texture is both lively and generous, with a beautiful harmony between minerality, refreshing acidity and subtle fatness. Flavors of wet stone and oyster shell complete the palate, offering a long, saline finish that beckons for another sip.
