Domaine Élodie Roy 's Santenay 1er Cru Les Gravières embodies the most authentic expression of this young Côte de Beaune wine estate. On an east-facing parcel, the Pinot Noir takes root in a terroir renowned for its limestone-clay soils , typical of the Santenay 1er Cru appellation, which lend finesse and structure to the wines. Elodie Roy manages her vines using a "culture raisonnée" approach to organic viticulture, with soil tillage, natural grass cover and hand harvesting, in order to respect the balance of the vineyard. The winemaking process combines whole-bunch harvesting (20-50%) with thirteen months' ageing in non-new oak barrels to preserve the purity of the fruit while adding depth.
Philippe Mischler, sommelier at Mundovin: Domaine Élodie Roy 's Santenay 1er Cru Les Gravières is one of the most structured cuvées in this Côte de Beaune appellation. This climate, renowned for producing straightforward wines that are sometimes a little firm in their youth, is gaining in elegance thanks toElodie Roy's precise, delicate style. The result is a Pinot Noir de Bourgogne that combines depth and energy, already seductive today but capable of improving with ten years or more of cellaring. A true gastronomic wine, designed to accompany the finest meals.
The nose immediately reveals a beautiful aromatic complexity, with scents of violet, blueberry and morello cherry. Controlled ageing brings fine smoky notes to the back of the glass.
The palate is full-bodied and well-structured, with tannins that are still a little tight but already well-integrated.
