The Inspired Hill is a champagne produced by Emmanuel Lassaigne on the terroir of Montgueux. A white cuvée of whites so 100% Chardonnay from chalky soils and raised for 24 months in barrels before champagnisation. On this champagne the work in biodynamics really revealed the exception where these plots are located.
Philippe Mischler, sommelier at Mundovin : Cuvée Colline Inspired is one of the prides of winemaker Emmanuel Lassaigne. He did not praise his ability to evolve and especially the work done in the vineyard and cellar. Unstandard champagne wine which surpasses all our expectations during the tasting.
On the nose, champagne is easily revealed on notes of mirabelle, quince, honey and a touch of pastry. A very greedy first approach which makes a mineral touch appear after a few minutes of opening.
This white white is in relatively tonic attack, precise and bright. Then, in the middle of the mouth, the fruity and floral notes appear. The finish ends with chalky and salty notes.
