The Métisse cuvée from the Olivier Horiot estate is a champagne made from 80% Pinot Noir and 20% Pinot Blanc, selected from the estate’s eight terroirs in Les Riceys. The power and freshness of this Métisse cuvée come from the Kimmeridgian marl and clay terroir. Olivier Horiot adds 20% of wine from his perpetual reserve during vinification to impart smoothness and complexity.
Philippe Mischler, sommelier at Mundovin: For his Métisse champagne, Olivier Horiot chose to ferment and age the wine in oak barrels for one year on fine lees with gentle stirring. This approach preserves the fruit and naturally reveals the potential of the eight blended terroirs.
On the nose, the wine is very expressive, offering a vast aromatic palette. One discovers notes of yellow fruits, exotic fruits, and very refined, slightly oxidative touches.
On the palate, it is full-bodied, with a smooth texture and caressing bubbles. Notes of exotic fruits intertwine with hints of citrus and brininess. A precise and indulgent champagne!
