Champagne Boréal from Maison Clandestin is a Blanc de Noirs produced from a north-facing vineyard plot. The vines are planted on Kimmeridgian-type clay-limestone soil at an elevation of 200 meters. Their average age is 30 years. All the grapes used in the Les Semblables Boréal cuvée are pressed directly as whole clusters, then fermented and aged in French oak barrels. The second fermentation takes place in the bottle for 24 months, after which the wine is disgorged and not dosed.

Philippe Mischler, sommelier at Mundovin: The Boréal cuvée is a Champagne of remarkable power and concentration that demonstrates how one can produce exceptionally delicious wines from very cool terroirs, as is the case with the “Les Semblables” plot.

On the nose, the champagne reveals lovely citrus notes and a hint of rhubarb. There are also beautiful notes of linden blossom and even a few hints of green tea.

The palate is velvety with a creamy mouthfeel. The bubbles are exceptionally fine and plentiful, lending this champagne brightness and freshness. The finish is briny and iodine-tinged, with a beautifully long aftertaste.
