Domaine Chantal Lescure 's Beaune 1er Cru Les Chouacheux is one of the great wines of the Côte de Beaune. Produced from 50-year-old Pinot Noir vines, this cuvée is a massal selection from one of the appellation's southernmost parcels. Regularly planted and cultivated organically by hand, this parcel of the Les Chouacheux climat is renowned for its clay-limestone soil rich in iron oxide, the typical red Burgundy earth that lends such minerality to Côte de Beaune wines. To bring out the extraordinary potential of this climate, Domaine Chantal Lescure uses a low-intervention winemaking process, where the grapes are destemmed and vatted by gravity for a long maceration of almost a month. The wine is then aged for eighteen months, mainly in old oak barrels, to preserve the pure expression of the terroir.
Philippe Mischler, sommelier at Mundovin: Domaine Chantal Lescure 's Beaune 1er Cru Les Chouacheux is a masterfully complex wine. Controlled yields and minimalist winemaking make it possible to sublimate the optimal ripeness of the grapes on this exceptional yet little-known terroir. The result is a well-balanced, racy and expressive wine.
On the nose, the wine offers intense, elegant aromatic expression from the very first moments of tasting. Magnificent scents of red and black fruits and delicate floral touches form a refined profile, mingled with deeper notes of pepper, licorice and mocha.
The palate is majestic, with a fresh, caressing attack. Fruity flavors coat the palate without heaviness, supported by remarkable tannic finesse. The aromatic persistence of the finish and the saline minerality that emerges suggest harmonious ageing for at least the next ten years.
