In the world of high-end alcohol-free drinks, BLÅ from Copenhagen Sparkling Tea Company stands out as an exceptional cuvée, comparable to the finest sparkling wines. A pioneer in the world of gourmet alcohol-free drinks, Copenhagen Sparkling Tea Company was born in 2017 in Copenhagen from the expertise of award-winning sommelier Jacob Kocemba, and his aspiration to renew food and beverage pairings. The idea was born a few years earlier, when Jacob, faced with the impossibility of finding a wine to accompany a dessert in the Michelin-starred restaurant where he officiates, imagined a homemade beverage based on effervescent tea.
BLÅ is a sparkling tea made from a complex blend of 13 organic black, white, green and oolong teas, including Darjeeling First Flush and the famous Silver Needle. Carefully selected from prestigious plantations around the world, each tea is infused individually and by hand in small batches at a precise temperature and for a precise length of time, to guarantee finesse and balance. Once the infusions have been blended, grape juice and a dash of lemon juice are added before the addition of CO₂, injected in three stages to reach 5 bars of pressure while avoiding excess foam. The drink then rests for 6 to 12 weeks in the bottle, ensuring a delicate, persistent foam.
Philippe Mischler, sommelier at Mundovin : Copenhagen Sparkling Tea Company's cuvée BLÅ is a top-of-the-range alternative to sparkling wines, remarkable for its balance between delicacy and depth. Its refreshing expression and subtle tannic structure open up new horizons in the non-alcoholic beverage category, whether as an aperitif or to accompany light dishes or refined desserts. It is particularly popular on the menus of Michelin-starred restaurants, where it offers an elegant alternative to gourmet food and wine pairings.
The nose of this sparkling tea evokes a refined bouquet of delicate jasmine and chamomile, enhanced by a fresh citrus nuance. Subtle floral tones open up slowly to form a luminous olfactory palette.
On the palate, the attack is both lively and light, balanced by the freshness of lemon and the slight bitterness of green tea. The body is enriched by a silky texture that lends the whole a pleasant smoothness and depth. The complex aroma is fully expressed through to the finish, which lingers on a fine tannic sensation and leaves a persistent floral imprint.
