Wine Description
Cuvée Schiste from Domaine des Ardoisières is one of Savoie's exceptional white wines, with a deeply mineral, taut character in the pure spirit ofIGP Vin des Allobroges. On the steep, south-facing terraces of the Cevins hillside, which can reach 60% slope in places, the shallow schist, micaschist and silt soils produce a balanced blend of Jacquère (40%), Roussanne (30%), Malvoisie (20%) and Mondeuse Blanche (10%). The vines are worked biodynamically, with very low yields to ensure natural concentration and exceptional purity. Whole-bunch winemaking with indigenous yeasts, no added sulfur, and ageing for 12 months in barrels.
Philippe Mischler, sommelier at Mundovin : Domaine des Ardoisières ' cuvée Schiste is a crystalline, chiselled white, a symbol of Savoie minerality. Its elegant tension and pure expression give it a strong identity, capable of immediate seduction but also of gaining in complexity with a few years of cellaring - this is the heritage of the Domaine des Ardoisières terroir and its roots in the IGP Vin des Allobroges.
The nose opens with a delicate floral palette, combining white flowers and fresh citrus notes, where orange blossom blends with lemon and citron. A refined mineral framework, the signature of schistose rock, envelops these aromas with subtle, sophisticated depth.
On the palate, the attack is lively, taut with chiseled acidity that immediately establishes an elegant dynamic. The wine expresses itself in a harmonious half-body, both ample and taut, offering a sensation of relief without ever losing its purity. A fine note of gunflint prolongs the saline length of the finish, a moving reflection of the quintessential terroir.
