Domaine Gauby' s Côtes Catalanes "Mel" is a classy cuvée produced by Gérard Gauby. It is made exclusively from Grenache Noir, which reveals all its power but also its finesse. This wine reflects the unique terroir of Calce, where limestone and schist soils lend minerality and depth to the grapes. Cultivated biodynamically, with a respectful approach to the local ecosystem, the wine benefits from ageing in foudre and demi-muids to bring out the purity and authenticity of the Grenache grapes.

Philippe Mischler, sommelier at Mundovin : Calce's characteristic limestone and schist soils, arid and deep, give the wine an exceptional structure where each vine plunges deep to draw out the essence of this unique terroir. Gérard Gauby cultivates his Grenache Noir in such a way as to limit human intervention and preserve the integrity of the grapes.

The nose is intense and generous, with aromas of black cherry, ripe raspberry and garrigue, accompanied by more subtle notes of violet and spices. These floral and fruity touches mingle with mineral nuances, typical of schist soils, adding depth and unique complexity.

The palate is ample and silky, offering a beautiful intensity of red and black fruits, punctuated by notes of wild herbs and a slightly peppery finish. The tannins are smooth and a natural freshness perfectly balances the richness of the Grenache, giving it length and elegance on the palate.
