Domaine Larue 's Chassagne-Montrachet 1er Cru La Boudriotte is rooted in the heart of the appellation, right next to Premier Cru Morgeot. Nestled at an altitude of 230 meters on an east-facing slope, the parcel is home to old vines planted in 1941 by the wine estate. The deep clay-limestone soils typical of Burgundy provide Pinot Noir with a nourishing base, whose richness in iron oxides gives the grape a remarkable fleshy power, accentuated by high-density planting and the meticulous care lavished by Domaine Larue. Spring disbudding and light ploughing, combined with grass cover on a third of the plot, ensure that the vines are well-balanced and biologically protected to ensure the purity of the grapes. In July, manual leaf thinning and the removal of suckers improve the sunshine and natural ventilation of the berries. The grapes are hand-harvested, precisely sorted and partially de-stemmed before a few days' cold maceration and a maximum 3-week fermentation. The aim is to avoid over-extraction, which would make the clays too prominent and the wine too massive on the palate. Ageing for 12 months on fine lees in experienced barrels, followed by a further 6 months in temperature-controlled stainless steel vats, is designed to polish the edges without altering the fruit.

Philippe Mischler, sommelier at Mundovin : Domaine Larue 's Chassagne Montrachet 1er Cru La Boudriotte aptly expresses the depth of Burgundy's clay-limestone soils. From delicate fermentation to velvety ageing, Pinot Noir is treated with all the respect due to a raw material that is already naturally opulent. A Chassagne Montrachet 1er Cru among the most complete and delicious!

On the nose, the bouquet opens with immediate generosity and intense notes of ripe red berries. As the wine opens, complexity sets in, revealing the natural richness of the parcel: hints of licorice, peony and a hint of fine leather begin to emerge. An earthy, smoky, almost animal dimension envelops the whole with its depth and superb complexity.

On the palate, it's an experience of plenitude, where the material immediately reveals itself to be fleshy and enveloping. We're seduced by the density of the juice and the finesse of the grain of tannin, which structures the velvety structure and gives the wine its personality. The juicy material displays breathtaking aromatic power, between stewed red berries, fine spices and smoky filigree. The finish lingers on savory notes of cherry pits, while the discreet, perfectly blended woodiness of the ageing adds elegant relief and a touch of noble bitterness.
