Wine Description
Mas des Chimères ' Caminarem cuvée is the great promise of the Terrasses du Larzac. On the wind-beaten, sun-tanned heights around Lac du Salagou, the old vines of Syrah, Mourvèdre, Carignan, Grenache and Cinsault sink their roots into the basalt and red ruff soil of organically farmed plots. Each grape variety is hand-harvested at peak ripeness, gently de-stemmed, then co-fermented in concrete vats. Slow, low-intervention maceration favors infusion to preserve fruit elegance and aromatic precision. Ageing for 12 months in old barrels adds depth without masking the wine or overplaying the presence of wood. The result is a cuvée that combines depth and tension, in a nuanced interpretation of the Larzac terroir.
Philippe Mischler, sommelier at Mundovin : Although a little austere in its youth, Mas des Chimères' cuvée Caminarem proves incredibly lively with age. It is distinguished by a depth of character, luscious fruit and mineral tension that only a great Languedoc wine can offer. This powerful, elegant wine fully embodies the Terrasses du Larzac style, with its garrigue notes, assertive tannin grain and long-term profile. It knows how to wait, only to reveal a vibrant dimension of admirable energy.
The nose opens with dense fruit, including wild blackberry, morello cherry and blackcurrant, supported by an intoxicating perfume of garrigue and warm spices. A seductive hint of pine and laurel adds depth to the bouquet, accentuated by a background of leather and rock, outlining the mineral dimension of Terrasses du Larzac.
On the palate, the attack confirms this seductive impression, with a generous body perfectly enveloped by silky tannins. The structure unfolds, carried by delicate acidity and a hint of graphite reminiscent of the basaltic terroir. The black fruits of the nose are enhanced by peppery touches and a noble bitterness on the finish. The finish is long and sapid, subtly enhanced by a piney freshness that balances the whole and calls for ageing.
