Cuvée Métisse from the Olivier Horiot wine estate is a champagne made from 80% Pinot Noir and 20% Pinot Blanc grapes selected from the 8 Riceys terroirs owned by the estate. The power and freshness of this cuvée Métisse is provided by the Kimmeridgian marl and clay terroir. Olivier Horiot adds 20% of perpetual reserve wine during winemaking to add smoothness and complexity.
Philippe Mischler, sommelier at Mundovin : Métisse Champagne is Olivier Horiot's creation, a blend of 6 different terroirs. He chose to carry out winemaking and ageing in oak barrels for a year on fine lees, with a light stirring of the lees. This respects the fruit and naturally reveals the potential of the terroirs.
On the nose, the wine is highly expressive, offering a vast palette of aromas. Notes of yellow fruit, exotic fruit and refined, slightly oxidative hints come through.
The palate is full-bodied, with a smooth texture and caressing bubbles. Notes of exotic fruit mingle with hints of lemon and salt. A precise, gourmet champagne that will appeal to amateur and expert palates alike.
