As exclusive as it is ambitious, the cuvée Les Valnons Grand Cru Extra Brut from Champagne R. Pouillon & Fils is characterized by its delicate structure and balance. In the vineyards of Aÿ, Chardonnay, a grape variety rarely found here, takes root on a clay-limestone plateau nearly 160 meters above sea level.

Philippe Mischler, sommelier at Mundovin : Daring to use Chardonnay in Aÿ, the stronghold of Pinot Noir, is Fabrice Pouillon's crazy and successful gamble. This Champagne reveals tremendous energy, ample body and irresistible saline tension, while retaining interesting evolutionary potential.

The nose opens with notes of ripe white fruit, candied citrus and flowers. The brioche and slightly woody notes of ageing add just the right amount of complexity to enhance the overall elegance without distorting the expression of the grape variety.

On the palate, the texture is creamy yet chiselled, served by extraordinarily fine bubbles. The great freshness that runs through this cuvée brings vivacity and real energy to the ripe, evolved flavors, while the finish surprises with its saline length and very pure persistence.
