Domaine Thibault Liger-Belair 's Bourgogne Aligoté Clos des Perrières La Combe is a singular white wine from a small parcel in the Combe de la Serrée, bordering the village appellation in Nuits Saint Georges. This exclusive clos, planted in 1978, takes its name from the old stone quarries, known as "Perrières", which line this limestone valley. Here, thegolden Aligoté takes root in lean limestone soils, producing luminous, energetic whites. (Les Argilats). Its name, "Perrières", recalls its historical quarry origins and evokes a natural mineral line. Thibault Liger-Belair decided to honor this parcel with a golden Aligoté - a rare Burgundian white grape variety - worked here with the same rigor as his red cuvées. The grapes are hand-harvested, followed by a week's pellicular maceration at low temperature, before very slow pressing (8 hours). Ageing for 15 months in used barrels gives the wine a soft, textured presence, without masking the racy spirit of the terroir.

Philippe Mischler, sommelier at Mundovin : Aligoté Clos des Perrières La Combe is a revelation: discreet salinity, limpid freshness, rare intensity for this rather discreet grape variety. Its aromatic precision and length make every sip intriguing. Domaine Liger-Belair has produced a Bourgogne Aligoté capable of rivaling the nobler whites of Nuits Saint Georges

The bouquet immediately presents an explosion of citrus: yuzu lemon, citron, pink grapefruit. Delicious notes of orchard fruit, pear and green apple, evoke the ripeness of the grapes. A subtle minty freshness enhances the whole.

On the palate, the attack is straightforward, carried by tracing acidity. The texture is slightly velvety, the result of pellicular maceration. This lemony character is supported by a hint of green apple and a mineral framework that structures the whole. The finish, juicy and persistent, recalls the Clos' limestone soils and stretches out with crystalline elegance, confirming the rare quality of a carefully crafted Burgundy Aligoté.
