Domaine de Vaccelli 's cuvée Unu blanc embodies the essence of Vermentinu at its purest. In the heart of Corsica's Cognocoli Monticchi hills, the vines of this parcel selection are rooted in granitic arenas, drawing on a mineral energy that gives the wines an impressive vivacity. Hand-harvested, the grapes are worked organically and vinified with respectful precision: spontaneous fermentations, ageing shared between foudres and demi-muids, then a rest in bottle that completes the balance. Far from artificial, this cuvée is in line with the Domaine de Vaccelli philosophy: to reveal the terroir through a vibrant white wine, carried by a saline minerality and a freshness of great character.
Philippe Mischler, sommelier at Mundovin: Domaine de Vaccelli 'sUnu blanc is striking in its precision. It's a wine that gets straight to the point, delivering the quintessence of Vermentinu. Its crystalline tension and immediate brilliance will appeal to lovers of easy-drinking wines, but its ageing potential will also allow it to develop over the years. In the landscape of Corsican wines, it occupies the singular place of a sincere, precise and luminous white wine, true to the spirit of Vaccelli.
The nose opens with bright citrus scents, dominated by lemon, pink grapefruit and kalamansi. Delicate notes of acacia and hawthorn join the freshness of the fruit, enriched by a touch of fresh almond. The minerality of granite is expressed in the scent of wet stone and iodized accents that reveal themselves with aeration.
On the palate, the attack is immediate and brilliant. The palate unfolds with fluidity to a beautiful fullness of ripe, fleshy stone fruit. The finely saline acidity typical of granite is felt throughout, bringing verticality and tension to the whole with great precision. The lively, precise finish extends this impression of mineral purity, marked by citrus zest, a hint of green almond and a persistent iodine freshness.
