A farmer-winemaker on the Terrasses du Larzac

The Mas des Chimères wine estate is located in the commune of Octon, in the heart of the Terrasses du Larzac. The Dardé family settled here over 30 years ago. In those days, the grapes were all brought to the village's cooperative winery. It was only in 1993 that Guilhem and his wife Palma decided to create their own wine estate, Mas des Chimères. In 2008, their daughter Maguelone joined them and proved up to the challenge of taking over the family wine estate.

The terroirs of the Mas des Chimères wine estate have been untreated for over 30 years. The constant search for terroir expression has led them to work organically, with respect for the earth and its plants.

For Guilhem Dardé, who describes himself as a " paysan vigneron", this is the basis of a job well done, a rule from which he is certain not to deviate.

We have a real feeling for this wine estate, which produces wines that are both authentic and gourmet.

The red cuvées are juicy and expressive right from their youth, like the Nuit Grave cuvée made from a blend of Syrah, Grenache and a hint of Mourvèdre. A delicious, fruity wine that can be kept for 10 years. There's also the cuvée Hérétique, an original blend of 85% Merlot and 15% Cabernet.

Or the cuvée Oeillade, a pure Cinsault with tangy notes and incredible drinkability. And let's not forget Caminarem, a cuvée that brings together these 5 grape varieties in equal measure (Cinsault, Carignan, Mourvèdre, Grenache and Syrah).

The wine estate's white wine is also a pure marvel, vinified and aged in 400-liter barrels, revealing a rich, complex texture that rivals the finest references in the sector.
