domaine Weinbach's "La Colline du Château" takes its name from the cadastral site "Au Château", located on the slopes of the Grand Cru Schlossberg, close to the ruins of the Château de Kaysersberg. This unique terroir is composed of granite soils, giving the wine a distinctive minerality and elegant structure. The vines, planted in the 1960s, come from pre-clonal massal selections, offering precious genetic diversity.

Philippe Mischler, sommelier at Mundovin : The steep slopes and terraces of "La Colline du Château" require meticulous manual labor... The Weinbach wine estate practices Demeter-certified biodynamic viticulture, respecting the natural balance of the vine and its environment. Winemaking includes around 20% whole bunches, with a 7-day cold maceration followed by two weeks of classic maceration. Malolactic fermentation and ageing take place in 228-liter Burgundy oak barrels, 20% of which are new, for 14 months.

The nose reveals notes of rose petals, plum and blackcurrant. Small hints of cranberry add a nice burst of freshness. A minimum of two hours decanting is required when young.

On the palate, the attack is fresh and dynamic, the tannins still a little dry and lively. Beautiful acidic notes of redcurrant and a touch of pink grapefruit. A great wine in the making.
