The Christine cuvée from Atelier Particulier de Fermentation ingeniously blends a base of Jun cultures with acacia and linden honey, pear, meadowsweet, woodruff, and citron. Jun is a living beverage created through the fermentation of grape leaves and raw honey; this traditional method produces a sparkling, floral, and subtly tart drink with no residual sugar. A staunch advocate of a local and natural approach, Elsa sources her grapevine leaves from her neighbors—winemakers certified as organic and biodynamic. Here, linden and acacia honey kickstart the first fermentation, which is then completed by a second fermentation driven by the natural sugars from pear and citron. The infusion of aromatic flowers picked by Elsa Steullet during her walks lends this blend a delicate floral and fruity character that evokes an Alsatian garden in May more than a “simple” fermented beverage.
Philippe Mischler, sommelier at Mundovin: Christine, this is the cuvée fromthe Atelier Particulier de Fermentation that wins over skeptics, thanks to how well it pairs with simple, enjoyable cuisine. The sweetness of its flavors and its floral freshness conceal an underlying complexity that makes it a truly delightful drink. You’ll especially appreciate its liveliness and freshness on a hot summer day!
The nose is immediately floral, bursting upon opening with lovely aromas of linden, acacia, and wild white flowers, whose spring-like lightness pairs perfectly with the juiciness of ripe pear and the zesty notes of citron.
The palate captivates with its delicate effervescence. The absence of residual sugar allows the wine’s lively character to shine through, with floral notes that blend brilliantly with the smooth texture of pear skin. The slightly herbaceous finish lingers on the almond notes characteristic of meadowsweet and the delicate bitterness of citron.
