Winemaking

The grapes are destemmed, not crushed, and vatted by gravity. Pre-fermentation maceration lasts 3 to 4 days. Fermentation is gentle and long, using indigenous yeasts.

Livestock farming

Aged in cold cellars, in 30-50% new barrels. Malolactic fermentation takes place later, so we often bottle after 18/20 months

The terroir of Nuits-Saint-Georges Les Vallerots is renowned for its very chalky soils, ideal for growing Pinot Noir.

Philippe Mischler, sommelier at Mundovin : The Chantal Lescure wine estate, run by François Chavériat , continues a winegrowing tradition that goes back several generations. The grapes are harvested by hand, and only perfectly ripe grapes are selected. Winemaking is orchestrated with the precision of a goldsmith, preserving the integrity of the grapes and their purest expression.

On the nose, Nuits-Saint-Georges 1er Cru Les Vallerots reveals a captivating bouquet. Aromas of black cherry, blackberry and blackcurrant mingle with floral and spicy notes. Subtle minerality and woody nuances add further complexity to this aromatic symphony.

On the palate, this wine offers a taste experience of great elegance. Red and black fruit flavors blend harmoniously with notes of licorice, violets and pepper. Tannins are plentiful yet silky, creating a velvety texture. Remarkable length on the palate.
